Leave out the cheddar or swap it with a dairy free cheese. Eggs are rich in protein and choline, and broccoli an excellent source of folate. This quiche is a prenatal nutrition powerhouse! Ingredients
10 – 12 organic eggs
1 cooking onion, diced
1 tbsp. coconut oil or butter plus some for greasing
2 cups broccoli, washed and cut into florets
1 tbsp. water
1 cup organic cheddar cheese, grated
Salt and pepper
Directions
Preheat your oven to 350 degrees Fahrenheit.
Grease a large pie plate with butter or coconut oil.
Melt coconut oil or butter in a medium sized frying pan over medium high heat.
Fry onion until translucent.
Add broccoli and water. Fry, stirring, until water has been evaporated. Broccoli should still be crisp but lightly cooked.
Crack eggs into a large mixing bowl and beat. Add cooked onions and broccoli and shredded cheese to egg mixture and season with salt and pepper.
Pour entire mixture into greased pie plate.
Bake, uncovered, for 30 minutes or until eggs are set.
Cool for 10 minutes before slicing and serving.
